
Stop Waiting for Your Oven to Recover
Anyone who’s spent a morning loading cold dough into a deck oven knows the frustration. You slide those loaves in, the temperature drops, and suddenly you’re just… waiting. You’re waiting for the stone and the air to catch up so you can actually start baking. It kills your rhythm. That’s why we use infrared (IR) heaters as a backup. Instead of relying on the air to warm up, we put shortwave radiant lamps right in the ceiling. They hit the top of the bread instantly. **It’s fast. Really fast.**And that changes everything for your workflow. Here’s the thing: standard heating takes its time. It’s a slow crawl. But IR is different. It’s electromagnetic radiation, which is a fancy way of saying the heat jumps straight to the product. When you open that oven door and a cloud of heat escapes, these lamps kick in and bring the temp back to where it needs to be in a fraction of the time. As for the gear, we usually pick the heaters based on how big your oven is. We go with high-wattage quartz tubes because they have enough punch to get through the crust without drying out the middle of your loaf. Just make sure the voltage matches your current control panel. You don’t want to be messing around with bulky transformers if you can avoid it. Inside those tubes, you’ve got a tungsten filament wrapped in high-purity quartz. To keep things from getting out of hand, we suggest using a PID controller with a thermocouple sitting close to the baking surface. Without that, the lamps can overshoot the mark and you’ll end up with scorched tops. Nobody wants that. Now, putting these in is pretty simple, but there’s a catch. You have to think about the heat load on the housing. Those IR tubes get incredibly hot at the end caps. If your ventilation isn’t up to the task, you’re looking at melted sockets or warped brackets. Plus, you’ll use a bit more power than you would with a slow soak. But honestly? The boost in how much you can push through the oven makes it worth it. Just treat them as a “boost” button, not your main heat source, and you’re golden.
