
Stop Fighting Your Oven: A Better Way to Handle Hot Spots
If you’ve ever pulled a tray of pastries out of a multi-deck oven only to find the top rack is burnt and the middle is barely golden, you know exactly how frustrating it is. Most of these ovens just don’t distribute heat evenly. You end up playing a guessing game with your timers, hoping for the best. We decided to fix this. Instead of sticking with the standard heating elements, we swapped them out for independent infrared (IR) bulb arrays. Here’s the thing about heat. Standard convection ovens rely on moving air. The problem? Air is slow. It takes forever to react. Infrared is different. It uses short-wave radiation that hits the food directly. By putting individual IR tubes in every deck, you get total control. If that middle deck is acting like a freezer compared to the top, you just pump more power into that specific bulb. You aren’t stuck relying on one single thermostat to manage the whole machine. It just works. Now, let’s talk about the gear. We use high-purity quartz glass for these tubes. Why? Because quartz can handle the “thermal shock” of being turned on and off rapidly without cracking. Plus, the ramp-up is nearly instant. You flip a switch, and you have heat. Right now. But, a word of warning: quartz is fragile. It can take the heat, but it can’t take a hit. Make sure your mounting brackets are tight. You don’t want them rattling around while the oven is running, or you’ll be replacing bulbs a lot sooner than you’d like. Getting it running We made these as drop-in replacements. We used standard connectors, so you can wire them up without having to rip apart your control board or do any weird modifications. One last tip to make them last:keep the glass clean. In a bakery, grease and fats get everywhere. If that gunk builds up on the quartz, it creates “hot spots” on the glass, and the bulb will burn out way too fast. A quick wipe-down during your normal cleaning routine can add thousands of hours to the life of the tube. Once they’re in, your PID controllers will react much faster to the heat. That means every single tray comes out looking exactly the same. No more rotating pans mid-bake. No more burnt edges. Just consistent results.
